Cos Lettuce with Chunky Tomato Vinaigrette

Ingredients
2 large ripe tomatoes, halved, seeded and coarsely chopped
cup loosely packed fresh basil leaves
2 tablespoons tomato sauce
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 small clove garlic, crushed
½ teaspoon salt
1 large head cos lettuce, torn into bite-sized pieces
35g crumbled feta cheese

Preparation method
For the vinaigrette, place tomato, basil, tomato sauce, oil, vinegar, garlic and salt in a food processor. Pulse with on/off motion until blended but still chunky. Toss the lettuce with vinaigrette in a large bowl. Sprinkle with feta. Serve at once.
